Recipe: Pesto with Microgreens

Ingredients:

  • Microgreens (2 cups)

  • Basil (1 cup)

  • Garlic (2-3 cloves, finely chopped)

  • Lemon juice (juice of 1-1/2 a lemon)

  • Pampin seeds (1 cup)

  • Parmesan cheese (2/3 cup, finely grated)

  • Olive oil (1/3 cup)

  • Salt and pepper to taste

Instructions:

  1. Add pumpkin seeds olive oil, lemon juice, and garlic to a food processor or blender.

  2. Pulse until smooth and creamy.

  3. Add microgreens and pulse until finely chopped and well-incorporated.

  4. Season with salt and pepper.

  5. Alternatively, you can make microgreen pesto with pine nuts, instead of pumpkin seeds.
